Tbh you do have a lot of options available to you doing an Ash only run beyond those mon, including some pretty strong Gen I mon. Depending on what rules you work with you have access to a pretty diverse pool with forgotten mon like Haunter, Primeape, Muk, Tauros and Kingler which can all do pretty well.

To be honest I was just going to play through Yellow normally anyway, probably using Pikachu, Venasuar, Charizard, Blastoise, Pidgeot and Snorlax, makes for a decent team in game. I'll probably catch a Mew (or two) as well, just so I can trade one or two to Moon.

You'll be able to transfer mon from XY and ORAS to Sun/Moon so you don't have to worry about getting a Mew from RBY, its not a particularly hard to get mon from events or even just asking on Smogon or something. By all means get a Mew off of RBY but I'd probably recommend getting a good Mew from online rather than a random Mew, unless of course it turns out Mews come with some hidden held item from RBY as they did when transferred to GSC.

I don't actually even own a Mew in the later generations, I never get round to going into town when an event is on and it never seems to be an online event Pokémon, on that note I'm really glad Manaphy is an online event Pokémon, for some reason I really like Manaphy. They probably would, doesn't bother me though as I find most of the legendary Pokémon pointless anyway (stopped feeling the need to get them from gen 3 onwards) as it's not like they only add a few each gen, isn't there over 50 legendary Pokémon now? Now there's so many they don't feel particularly special anymore. Only legendary Pokémon I like (visually) from gen 3 onwards are Deoxys, Manaphy and Darkrai. I'd probably feel different on the matter if I played (well tried to) competetivly online as I imagine there is a lot of people out there with full teams of legendary Pokémon.

In yellow jolteon doesn't learn any electric attacking moves till like level 55 or something dumb

Get RBY Mew to transfer to Sun and Moon just for the otherwise illegal movesets. Same with a few things.

Chances are Sun and Moon are going to make them legal now though, except for some of the gooseberry fool up eton mess you can glitch into the games but Gen VII confirmed for generation of Sky Attack

Alternate idea for a run, a no evolution run. All of your Pokemon must be capable of evolving and be bottom of their evolution chain, you are then not allowed to evolve any of your Pokemon for the entire game. Harder in games without Eviolite.
