I picked up the Legend of Kay for the PS2 for £2 right after the HD remake was released. Might be worth while just doing that if you can still play PS2 games :)

Does it matter much whether I get Shovel Knight on Wii U or 3DS? Is there any real difference besides the smaller screen?

3d effect and streetpass features for 3ds, miiverse interaction for wii u. pick up both versions lol

I like 3D platformers. I recently invested in an xbox 360, as well as already owning a Wii, 3DS, and PS2. Any recommendations?

PS2 seems like the best place out of those for 3D platformers. Jak and Daxter, Ratchet and Clank and Sly Raccoon are some of the best 3D platformers you can play.
